Memory is where hiring bias gets in
A panel reconstructing an interview from memory is really comparing how memorable each candidate felt. A transcript moves the debrief back to the answers: someone quotes the line, the timestamp replays it, and the candidate seen on Monday is judged against the same kind of record as the one seen on Friday. Rename or remove names in the editor first if your process asks for anonymous review.

Yes, when people take turns. Similar voices around a single microphone are harder to tell apart; you can merge and rename speakers afterwards.
