Does it handle a full episode?

Yes; long audio is the normal case here rather than the exception. How much of each file is transcribed and how much you read depends on the plan.

Private or unlisted tracks?

A public track works. A private link with a secret token does not — if a visitor cannot open it without permission, neither can we.

Can it tell the host and the guest apart?

Yes, when they take turns. Each line is labelled and you rename the speakers once, which is usually all an interview needs.

What can I do with the text?

Copy it, export it as a document, or take timed subtitles if the episode also exists as video. Everything can be edited before you export.

Somewhere else?
